Any British cook worth her salt has a repertoire of pickles and chutneys at her fingers’ ends, along with her jams and other preserves. When Mrs Bailey goes to stay with her friend for the school holidays, she spends days in the kitchen, chopping and peeling and simmering away, to be sure the larder is lined with jars again before she leaves.
